what we call farmer's pie...

start with boiling potatoes...
mash part of them...
and I use the mixer for these because we like them really creamy for this...
potatoes, butter, milk, pepper and parsley flakes...
always make a little extra for potato soup for later in the week...
brown your ground beef...
there is some grease in this but it's not swimming in it...
we put it in a food processor...
I have a twin blade processor that is just the best one ever...
it gets everything...
no big chunks ever...
spread it out in a 9x13 cake pan...
lay down a layer of cheese slices...
sometimes we do 2 layers...
sometimes twice the hamburger and potatoes...
depends on how many you want to feed that night...
spread the mashed potatoes on top of that...
you can add grated cheese on top...
sometimes we do that...
and these are our layers...
you can add a can of well drained veggies, your choice, on top of the hanburger it you like...
I cannot have anything with a hull, so no peas or corn in it...
we serve it on the side and the guys just mix it in on their plates...
and after supper, there are only 2 pieces left out of 8...
I ate 2 myself and it was so good...
I started doing this when my kids were little and started getting picky about what they ate...
but this is one thing that they never argued about and ate it all...
even the neighbor kids and the boy's friends would show up on farmer's pie night...
when kids stayed all night, this was what they wanted...
mom's used to call me and ask me how to make it when their kids went home and told them they loved it...
and it's so easy...
and it microwaves really good for lunches the next day...

Now THAT sounds like a good down-home bone-warming recipe! When my kids were little I always made them "nests"..made of mashed potatoes with a hole scooped into the middle and filled with peas. They ate every one of them~;>) xxoo Diana
